Homemade Honeycomb (very easy) recipe

I love honeycomb and this is a really simple, 3 ingredient Nigella recipe that is a joy to make especially as you watch the molten mixture bubbling away and then how it foams up once you add the bicarbonate of soda – a true food geek’s delight!

100g Caster Sugar

4 tablespoons of golden syrup

1.5 teaspoons Bicarbonate of Soda.


1) Mix the sugar and syrup together in a pan and then put over a moderate heat for a few minutes. You’ll see it melt, darken in colour and then become a bubbling mass. NB do not stir it during this time, tempting though it may be!

2) Remove from the heat and whisk in the Bicarbonate of Soda

3) Pour onto some greaseproof paper and leave to set.


Once set, break up into smaller pieces and serve with a good quality vanilla ice cream. Or, you could melt some chocolate and dip the pieces in to make an even richer treat!
