Sebastian is well known in the industry for supplying some of Scotland’s best hotels and restaurants with his Artisan chocolates and fine Pâtisserie is very excited about the prospect of two local businesses joining forces to create something completely new. Although he hasn’t spend much time in a busy restaurant kitchen lately he’s no stranger to it, having headed up pastry sections of “The Kitchin” and “Castle Terrace” prior to setting up his own business in 2011.

Sebastian commented on the inspiration behind the dessert tasting menu: “The trend goes towards using more and more savoury elements in desserts. So it made sense to experiment and create an entire dessert tasting menu. This menu is a result of weeks of experimenting and refining. It uses ingredients such as vinegar, olives, and goat cheese and finishes with everybody’s favourite… Chocolate!”

Paul Gunning commented ahead of the event in January: “Sebastian is extremely talented and has supplied the restaurant with his chocolates and petit fours since we opened and I couldn’t think of anyone better to host this event. We are excited for Sebastian’s debut in the New Year and hope to make it a permanent fixture at the restaurant.”

A five-course dessert menu! That’s about the best idea I’ve heard in ages.
    More of them, please 🙂
