Steak Girl takes on the QMS steak sauce challenge

Some of you may remember a couple months ago that I was somewhat surprised (and totally over the moon) to receive a shed load of steaks from the lovely people at QMS (Quality Meat Scotland).

I’d been expecting something from them as they’d asked me if I’d be interested in doing a steak sauce challenge, where they would send me some ingredients & I would create a new sauce for a steak. I assumed I’d be getting some sauce type ingredients and possibly a couple of steaks – wrong! but gloriously so!

The challenge itself? Well therein lies a bit of a story…. we ate ALL the steaks before I’d even had any inspiration for my sauce.

We bought more steaks…….and then ate them (this was repeated a few times!).

I was chatting with ‘Beesy’ about the challenge to create a new steak sauce and she offered to bring me a set of sauce type ingredients ‘ready steady cook’ style so that I could get on with it and the following weekend she brought out my ‘bag’ – in it was double cream, lemongrass, basil and ginger – now that was a surprise, certainly not my usual and definitely not what I would put with beef – she was enjoying this ‘challenge’ I could tell!

So a couple more weeks went by and a few more steaks were consumed, I re-bought the ingredients for the sauce but just didn’t quite get around to it! But, finally, last night, I was in town (we were off to a new bar preview) so I re-bought (for the 3rd time) the sauce ingredients and completed my challenge!

I don’t usually make/eat sauces with my meat and really wasn’t sure with the ingredients I’d been given but I just made it up as I went along…

I infused the cream with lemongrass, garlic, chilli & ginger and then brought to the boil, adding some soy sauce & shaohsing cooking wine to really bring out the Asian flavours.

I cooked the steaks, then sliced them and served them on a bed of rocket salad with the sauce drizzled on top and garnished with some basil and oh my, it was absolutely bloomin delicious – no one was more surprised than myself!

So, a huge thanks to QMS for the steaks, they were awesome and I hope you enjoyed my take on your steak sauce challenge. I got there, even if it did take a while, although I was helping support the Scottish beef economy the whole way!

Also a big thanks to Beesy for the sauce ingredients and for being my guinea pig!

Job done!

I can say it was really delicious! I could of been much meaner with the ingredients list, a packet of popcorn, a banana and a pickled onion anyone? But this felt like it was enough of a challenge, and steak girl met that challenge with mucho aplomo!!
