Edinburgh Gin’s new Distillery and Heads & Tales Bar

A couple of weeks ago I went along to the launch party of Heads & Tales, Edinburgh’s new Gin Bar, with Edinburgh Gin. It’s not often I go to a bar and go ‘wow’ but that’s exactly what happened – it’s gone straight to the top of my favourite bars list.

I can’t recommend going there enough, if you can find it that is! It’s hidden away down some steps between The Huxley and Ghillie Dhu with very little in the way of signage and branding (which I like).

You walk past three large alcoves which would be great for a large group of you and then into the gloriously understated, quirky and yet comfortable bar. The masterpiece is the glass panels looking straight in on to Flora and Caledonia – the two stills and all the gleaming copper piping that makes up the distilling room.

Although they’re not operational yet, they should be in a couple of weeks when the last parts arrive! And it’s great that all Edinburgh Gin will soon be distilled in it’s home town with bigger facilities also being taken on in Leith.

I went back last week to meet David, Edinburgh Gin’s Blender/Distiller and chat Gin, juniper and booze in general. Whilst he’s waiting to get the ‘ladies’ up and running I caught him while he was playing around with some smaller stills that they’ve bought that will allow them to do workshops/corporate days out and let people create their own (would so love to do that!).

I now know a lot more about Gin, botanicals and distilling in general and despite my sudden enthusiasm for getting  a mini still at home & having a go myself and being told that I can’t (apparently it’s highly illegal to play around with heat & high strength alcohol without a licence), I still fancy looking into the Brewing & Distilling courses at Heriot Watt (where David studied).

Absolutely fascinating stuff and lovely to meet someone so creative and passionate about what they’re doing – it’s clearly not just a science but an art too! I’ll be looking forward to many more visits to my new favourite Edinburgh bar and am intrigued to find out about more about the cocktail with popcorn & peanut butter….? really…?
